Fruit that is ripening too quickly or just on the brink can be turned into fruit soup! This is just four peaches whizzed together with a bit of fresh ginger, orange juice, lemon juice, and a splash of cream.
I'd rather just eat the fresh peaches, after all the work it takes to blanch and peel them! But fruit soup is a lovely dessert in hot weather for a light meal.
